Electrically grinding your cutlery too often will shorten its lifespan.  That's why butchers & professionals never reach for a knife without also reaching for their "steel".  They know that honing their knives each time they are used will reduce the need for grinding.  Less grinding means a longer life for you knife.

The Chantry Knife Sharpener serves as a mechanical "butcher's steel", honing both sides of the blade at the same time & at the same angle, eliminating the biggest problem with a steel- the angle used to hone the edge is difficult to maintain even by the most seasoned professional.

The Chantry Story

The Chantry Knife Sharpener was invented by English butchers in 1929.  The problem in the butcher shop was that the new employees were unable to use a traditional steel effectively, thus requiring the knives to be ground more often, shortening their lifespan.  Although the Chantry's internal workings have not changed since 1929, the outer casing was re-designed by artist Robert Welch in the 1960's.  The Chantry is now in the permanent Design Collection of the New York Museum of Modern Art.
